As ube and gabi ice cream variants continue to rise in popularity, here comes another sweet surprise: the Department of Science and Technology is building a sweet potato ice cream factory to ramp up production of the special treat that is made out of locally grown kamote and other ingredients.

DOST will spearhead the funding of the ice cream plant, which will be located at the Philippine Root Crops Research and Training Center in Baybay, Leyte.

More kamote ice cream fans can enjoy flavors such as cheesy macapuno, jackfruit, mint-chocolate, double dutch, and coffee-choco swirl as the agency looks to increase their current production of 1,128 tubs of 100 grams each day.

Secretary Fortunato de la Peña said that the sweet potato ice cream processing center is the first ice cream processing project of Baybay City’s local government unit.

According to de la Peña, most of the employees are women who now enjoy a stable source of income.
